
Chole Chawal is something I really relish every time I make it. It turns out to so be so delicious and its not very difficult to make.

Chole are made in so many different ways: Amritsari Chole and even in salads. They are so versatile and can be relished in so many ways.

For now, let’s make Chole Chawal.
All You Need:
- Chole/ Garbanzo Beans- 1 cup (Soaked for 6-8 hours)
- Salt- to taste
- Haldi- ½ tsp
- Bay Leaf- 1
- Badi Elaichi/ Black Cardamom- 1
- Choti Elaichi/ Green Cardamom- 1
- Laung/ Cloves- 2
- Jeera- 1 tsp
- Hing- a pinch
- Ginger- Garlic Paste- 1 tsp
- Onion- 1 medium (pureed)
- Tomato- 2 medium (pureed)
- Dhaniya Powder/ Coriander Powder- 1 tsp
- Red Chili Powder- ¼ tsp or to taste
- Garam Masala- ½ tsp
- Cilantro- to garnish
- Water- 3-4 cups
- Ghee- 2 tsp
A Few Tips:
- Soak the chole overnight or 6-8 hours. If you are running short of time, while boiling the chole, add a pinch of baking soda. That should help.
- If you add baking soda, pressure cook for 4-5 whistles and check once for doneness.
- Mash the chole lightly. Don’t skip this step. It completely changes the texture of the final dish.

Method:
- In a pressure cooker, add the soaked chole, around 3 cups of water, bay leaf, badi elaichi, choti elaichi and laung. Add 1 tsp salt and haldi.
- Pressure cook for 6-7 whistles.
- Once done, in another pan, add ghee/ oil. Once hot, add jeera and hing.
- Next, add onion puree. Saute the onion puree until brown and cooked.
- Then add ginger garlic paste. Mix and cook for a minute.
- Pour the tomato puree. Give it a mix, cover and cook for 5 mins .
- Add haldi and salt.
- Cover and cook until oil has separated.
- Add dhaniya powder and red chili powder and saute for a minute.
- Add a cup of water just to mix all the ingredients together.
- Pour in the boiled chole and mix well.
- Using the back of your spatula or a masher, mash the chole lightly. This enhances the flavor as well as changes the texture of the dish.
- Adjust the water if required.
- Let it boil for 5 mins.
- Add garam masala and garnish with cilantro.
These chole are best served with (obviously) Jeera Rice and Achari Pyaaz.
