Roasted Garlic Baby Potatoes

The perfect Roasted Potatoes are crisp on the outside and soft on the inside and not dry!

It’s not difficult to make these but they do need a little time and effort to make and there are a few steps that I follow.

You can make these on a stove top or in the oven.

Let’s get started.

All You Need:

  1. Baby Potatoes- 20 (Cut in half)
  2. Salt- 1 tbsp + 1 – 2 tsp
  3. Baking Soda- 1 tsp
  4. Water- for boiling the potatoes
  5. Garlic- 5 cloves (medium size)
  6. Thyme- 1 tbsp
  7. Olive Oil- 2 tbsp
  8. Chat Masala- 1 tsp
  9. Lime- 1
  10. Oregano- 2 tsp
  11. Black Pepper- 2 tsp

A Few Tips:

  • You can make these on the stove top or in the oven. To make them on the stove top, make them on medium heat and keep tossing them every 5-7 mins.
  • You can use regular potatoes as well. Just make sure to cut them into smaller pieces similar to baby potatoes.
  • Olive oil can be replaced with any other cooking oil. You can reduce the oil to 1 tbsp as well.
  • To make it a little quicker for the next day, you can boil the potatoes at night and make the garlic oil and strain it and keep it aside. This way you’ll just have to keep them in the oven in the morning.

Method:

  • In a big pot, add enough water to boil the potatoes along with 1 tbsp salt and baking soda.
  • Once the water comes to a boil, add all the potatoes. After the water starts boiling again, set a timer for 15 mins or until they are tender.
  • In a small pan, add olive oil, garlic and thyme. Sautée on low – medium flame until garlic becomes golden brown. Strain this mixture in a bowl using a metal sieve.
  • Keep the garlic aside for later use.
  • Preheat the oven to 450° F.
  • Once the potatoes are done, strain them and add them to the bowl with the oil.
  • Toss the potatoes so that they are all covered in the oil and add them to a grill pan or any other baking tray if you don’t have a grill pan.
  • Bake them for 30-35 mins, until they are crisp. Toss the potatoes after 15 mins to ensure even bake.
  • Once done sprinkle the garlic and thyme mixture, add chat masala, salt, pepper and oregano and toss well to mix everything.
  • Pour the juice of 1 lime.
  • Serve hot!!

I served these with simple guacamole and some butter toast along with hot tea.

They turn out to be perfect roasted potatoes. Crisp and soft!!
