Murukku or Chakli

Murukku (or Chakli as we call it) is a savory & crispy Indian snack. It’s amazingly delicious and we fondly enjoy it with our evening tea. These are not only famous in India but also in Malaysia and Singapore. I met some friends from Malaysia and they told me that they get Murukkus during Diwali in Malaysia. So, for them Diwali is Murukku time..!!

It is so easy to prepare. Inspired by my friend Amruta, I tried making them in a different way. Amruta makes amazing murukkus. You could check out her version of murukku and her other delicious recipes at www.cookingspace.blogspot.com .

Preparation Time: 15 mins            Cooking Time: 10 mins        Makes: 30

All you need:

  • Rice Flour – 2 cup
  • Urad dal flour or besan – ½ cup
  • Hing (asafetida) – ½ tsp
  • Haldi – ½ tsp
  • Red Chilli Powder – ½ tsp or to taste
  • Sesame seeds – 1 Tsp
  • Ghee – ¼ cup
  • Water – as required
  • Salt – to taste
  • Oil – for frying

A Few Tips:

  1. If you cannot handle spice or if you are making it for children, you could simply adjust it to your taste.
  2. While kneading the dough, do not add a lot of water at once. These flours take some time to come together.
  3. Use parchment paper while you are shaping the murukkus and also to transfer to the oil for frying. Parchment paper helps in two way: the murukkus will not stick to the parchment paper and also if the parchment paper touches the hot oil, it does not burn; so you can be safe.

Method:

  • In a bowl, mix rice flour, besan, hing, haldi, red chilli powder sesame seeds and ghee and mix well.
  • Once everything is well combined, add little water to make a soft yet a stiff dough. Knead the dough for 3-4 minutes.
  • Keep the dough aside for 10 minutes.
  • You will need the one star shaped disc for the murukku maker. Till the time the dough is resting, you can grease the murukku maker.
  • After 10 minutes, add some dough in the murukku maker.
  • Start shaping the murukkus on the parchment paper in circular motions. Once you have achieved the shape, just pinch the end.
  • Add about 6-7 murukkus to the hot oil in one time and fry until they are crispy.
  • Take them out on a napkin to soak the excess oil.
  • Store them in an air tight container.
  • Enjoy them with a hot cup of tea in the evening.
