Khaman/ Yellow Dhokla (in microwave)

Khaman Dhokla

Khaman Dhokla is one of my husband’s favorite dish. If given an option he would have it every weekend. It’s such a simple recipe and takes only a few minutes to make it.

All You Need:

  1. For the batter-
    • Besan (gram flour) – 1 cup
    • Yogurt – ½ cup
    • Water – ¼ cup
    • Sugar – 1 tsp
    • Salt – ¼ tsp
    • Turmeric Powder – a pinch
    • Ginger – 1 inch piece grated
    • Oil – 1 tbsp.
    • Green Chillies – 1 or 2 chopped (optional)
    • Fruit Salt / Eno (plain) – 1 tsp
  2. For the seasoning-
    1. Mustard Seeds – 1 tsp
    2. Green Chillies – 4 cut from the centre
    3. Curry Leaves – 10 to 15 leaves
    4. Coriander Leaves – 2 tsp (finely chopped)
    5. Coconut – 1 tsp (grated)
    6. Water – 1 ½ cups
    7. Sugar – 2 tsp
    8. Lemon Juice – 1 Small Lemon

Method:

  1. In a bowl, add besan, yogurt and water. Mix it well and make sure there are no lumps.
  2. Add sugar, salt, turmeric powder and ginger. You could add green chillies if you want to make it a bit spicy.
  3. Add oil and mix.
  4. Oil a microwave safe bowl (or if you have a microwave safe dhokla maker, you could use that). Do this before you add fruit salt to the batter mixture.
  5. This is where you need to hurry up. Add fruit salt / eno and mix only in a few stokes. DO NOT OVER MIX.
  6. Add the batter in the microwave safe bowl.
  7. Microwave the batter for 4 mins.
  8. Insert a toothpick to check if the dhokla is made.
  9. Let the dhokla cool down a little. Cut the dhokla into desired size and shape.
  10. Now for the seasoning, in a pan, add little oil.
  11. Once the oil is hot, add mustard seeds.
  12. When the mustard seeds splatter, add curry leaves, coriander leaves and green chillies.
  13. Add lemon juice, water and sugar.
  14. Let sugar melt and the water boil.
  15. Spread the seasoning over the dhokla. Set aside for about 2 mins so that the dhokla absorbs all the water.
  16. You’re all set. Serve it to guests or have it with tea in the evening as a snack.
