Homemade Ladyfingers (Savogliardi)

I wanted to make Tiramisu but could not find the main ingredient—- Ladyfingers. So I decided to make them on my own.

You could try them out too. These can be served as they are or you could use them in Tiramisu.

Preparation Time: 20 mins        Baking Time: 15 mins        Makes: 20 pieces

 

All you need:

  • 3 egg whites
  • 3 egg yolks
  • ¾ cup granulated sugar
  • 1 Tsp Vanilla Extract
  • ½ cup all purpose flour
  • 2 Tbsp confectioners’ sugar
  • 2 baking trays

Method:

  • Preheat the oven at 390°F & line 2 baking trays with parchment paper.
  • Beat the egg yolks along with half the sugar and vanilla extract until pale in color and creamy.
  • In a separate bowl, beat the egg whites. Once they form soft peaks, add the rest of the sugar. Continue beating until stiff peaks are formed and seems to be glossy.
  • Sieve in the flour into the egg yolk bowl and fold in with a spatula.
  • Now fold in the egg whites (use the cut and fold technique). DO NOT OVER MIX. Simply fold it.
  • Fill in the batter in a piping bag. Pipe the batter onto the baking tray into lady finger shapes.
  • Make sure that you leave enough space in between each lady finger as they with expand.
  • Dust with confectioners’ sugar.
  • Bake for about 10 – 15 mins or until light golden brown.
  • Remove from the oven.
  • Carefully, pull out the parchment paper and remove the ladyfingers. Do not let them cool down completely. The parchment paper will stick to the ladyfingers making it difficult to remove them. You could use a wet towel and put it under the parchment paper to easily remove the lady fingers.
  • Place them on a wired rack and let them cool down completely.
  • You could store them in an air tight container if you are not going to use them right away.
  • You could use these to make Tiramisu or serve them with tea.
